Sponge Cake

Ingredients

Il Gran Pan di Spagna 1.000g

Eggs 700g

Water 100g

Preparation

Sponge Cake

Step1

Place the eggs and water in a stand mixer fitted with a whisk attachment, add IL GRAN PAN DI SPAGNA, and briefly mix at low speed until a homogeneous mixture is obtained.

Step2

Whip at high speed for 8-10 minutes.

Step3

Pour into a previously greased mold up to ¾ of its capacity.

Step4

Bake in a convection oven at 160°C or in a static oven at 180°C for 23-25 minutes.
