Braided Cake

Dough

Dolci Lievitati 1000g

Water 230g

Brewer's yeast 50g

Eggs 200g

Gioia 300g

Sugar 100g

Preparation

Step1

Knead all the ingredients except the margarine in a stand mixer until the gluten network is formed.

Step2

Add the margarine and finish kneading the dough.

Step3

Let the dough rest for 15 minutes, covering it with a plastic sheet. Then divide as desired and shape into a braid.

Step4

Let it proof for approximately 60-90 minutes at 32°C (89.6°F) with 80% humidity.

Step5

Bake at 180°C (356°F) according to the portion size.

Step6

Fill as desired and sprinkle with powdered sugar.
