Caramel Cheese Cake

Cookies Bases

500g Original Mc Vites cookies

150g Melted Butter

Cheese Cake Mousse

50g Water

80g Sugar

100g Egg Yolks

500g Philadelphia

250g Caravella Gran Ciocco Avorio

5g Vanilla Paste

60g Gelatine Mass

300g Cream

Caravella Gran Caramello Mousse

1000g Caravella Gran Caramello

1000g Cream

100g Gelatine Mass

Preparation

Cookies Base

Step1

In a food processor blend the cookies and mix with the melted butter.

Step2

Spread 150 gram of it in a 18Cm cake ring then press it with a spoon in order to create the traditional cheese cake base

Cheese Cake Mousse

Step1

Prepare the patè a bombe scaling in a pot water and sugar.

Step2

Bring up to 121 °C and pour on the egg yolk (when the syrup reaches 110°C start to whip the egg yolk).

Step3

In the microwave warm up to 35°C Philadelphia, Gran Ciocco Avorio and vanilla paste.

Step4

When the pate’ a bombe is around 40°C combine together the melted gelatine mass and the Philadelphia mix.

Step5

Then fold in gently the semi whipped cream.

Step6

Pour the mousse in a cake ring previously lined with cookies base and freeze it.

Caravella Gran Caramello Mousse

Step1

Melt the gelatine mass and cream in the microwave until fully dissolved.

Step2

In a large bowl, warm the Caravella Gran Caramello to 40°C.

Step3

Meanwhile, semi-whip the 900 grams of cream.

Step4

Add one-third of the semi-whipped cream to the warmed Caravella Gran Caramello and whisk vigorously.

Step5

Incorporate the melted gelatine mixture, then gently fold in the remaining semi-whipped cream

Assembling

Step1

Prepare the cake base, refrigerate to set.

Step2

Pour on top the mousse and freeze it

Step3

Decorate the top with the Gran Caramello mousse
