Moorish Heads

Impasto

Soffymix 1000g

Powdered sugar 200g

Eggs 1200g

Bagna

Water 75ml

Sugar 25g

Rum or another liqueur of choice 25ml

Farcitura

Fondente Ariba chocolate 300g

Butter 35g

Cow's cream 50ml

Preparation

IMPASTO

Step1

Mix at high speed for 5 minutes until a smooth and homogeneous mixture is achieved.

Step2

Pour onto a baking tray lined with parchment paper and bake at 160°C (320°F) for 20-25 minutes with the vent open.

Step3

Cool, cover with cling film, and let rest in the refrigerator overnight.

Step4

To achieve a rounder shape, increase the amount of Soffymix by approximately 100 g.

BAGNA

Step1

Prepare a syrup with water and sugar, then add the liqueur off the heat.

FARCITURA

Step1

Heat the butter and cream until boiling, then pour the mixture over the chocolate to create a ganache.
