Ingredients for a 3 KG Tray

Aymara Tutto Fondente Base 1900 g

Water (boiling) 2100 g

Brunella Dark Chocolate 500 g

Raspberry variegate 300 g

Red Berry crumble flavor, as needed

Step1

Pour the water and Aymara Tutto Fondente base into a pitcher.

Step2

Blend for 2 minutes and churn.

Step3

During extraction, swirl in Raspberry Variegate and Red Berry Crumble.

Step4

Smooth the surface and place the gelato tray in the blast chiller for 5 minutes.

Step5

Pour the Brunella Dark Chocolate over the gelato, then return the tray to the blast chiller for 20 minutes.

Step6

Decorate with Red Berry Crumble.
